Do you guys think there would be any value in tying weighted nymphs on hooks with the eye turned to the side so that the dropper could run straight down from the hook instead of from the side? Or, alternatively, do you think there would be any value in tying you nymph sideways on a hook to achieve the same result?

I am assuming you are intending to drop off the hook eye? Just tie your dropper tippet around the tippet above the fly--the knot will slide down and stop at the eye of the fly. This way too, you can change either fly without having to take off the dropper.
I fished that way for years before using comp. rules....works like a dream.
